Sesame Ground Chicken with Rice

This Sesame Ground Chicken with Rice is an easy and healthy meal. It is a sweet and savory dish that has some crunch from the garnishes of green onions and cashews. This is the first dinner I made in our new home in Port Ludlow, Washington. Because the stove needs replacing, you will see that I used the brown setting on my All-Clad cooker in the photographs. But the instructions for this recipe are written so that you can easily make this on your stove.

 1 tablespoon olive oil
 1 medium onion, diced
 3 tablespoons garlic, minced
 1 pound ground chicken
 Salt and pepper to taste
 1-2 teaspoons chili garlic sauce (depending on how much heat you like)
 ΒΌ cup soy sauce (I used gluten free Tamari)
 1/3 cup brown sugar (I used Turbinado)
 1 tablespoon toasted sesame oil
 1/3 cup chicken broth
 1 tablespoon corn starch mixed with one tablespoon of water
 Chopped green onions (4 small), sesame seeds and salted cashews for garnish
 Steamed rice (see note below)

Add olive oil to the skillet over medium heat. Cook the onion for 3-4 minutes until softened. Then add the garlic and cook one minute longer.

Add the ground chicken the skillet with onions and garlic. Break up the chicken into small pieces. (I like to use a stainless-steel potato masher.) Season the chicken with salt and pepper.

In a small bowl, mix the chili garlic sauce, soy sauce, brown sugar, sesame oil and chicken broth. Pour the mixture over the chicken and stir to combine. Bring to a simmer.

Mix the cornstarch and water well with a whisk and add to the pan.

Simmer and stir the chicken until the sauce has thickened.

Serve with green onions, sesame seeds, cashews and steamed rice. Yields 4 servings.

Note: Steamed rice is very easy to make if that is new to you. In a pot, add 2 cups of water and a tablespoon of oil or butter. Bring to a boil. Add one cup of rice and stir. Cover and lower the heat to low. Let it cook about 20 minutes or until the rice has puffed up and is tender.
