Have you heard of Steak Diane? It is delicious and I have now made it twice for Dave. You can also substitute your protein. I used pork chops and that is my recipe for this month which I am calling Pork Chops Diane. I also think you could use chicken or a dense fish (like Halibut). The only alteration to the recipe is that you might want to substitute the beef consommé with chicken or fish stock. My back story in the recipe gives you some history.
I have been impressed with Dave’s hiking/camping trips that he has been doing over the last 10 years. The footer photo is his new tent. That and all his provisions fit in his backpack. He recently did a three-day backpacking trip to the central Olympic National Park. As far as food provisions on these trips, he favors freeze dried dinners such as Beef Stroganoff, Italian Style Pasta Marinara or his favorite being the All-American Works Burger. It is surprising what these small food companies have come up with. It’s a reminder that if you start with good ingredients, it is hard to go wrong.
It looks like we will have Le Conge’ back in her slip in the next couple weeks. We can’t wait to cruise and cook aboard!
