Dave and I are home from our second cruise this year with our Yacht Club. It was a relatively easy five-hour journey across the Strait of Juan de Fuca to the San Juan Islands. We enjoyed the San Juan, Orcas and Lopez Islands. My header photo is from the small village of Roche Harbor on the northern side of San Juan Island. The footer photo is our boat Le Conge’ at Deer Harbor on Orcas Island.
On this cruise we had some amazing dinners at local restaurants. On other nights we all enjoyed each other’s cooking at potluck dinners. I took double batches of scallop potatoes and rice pilaf for two of the dinners. I also hosted an appetizer potluck on our boat on Lopez Island. My contribution was a simple onion dip with corn chips and celery. Some of the other appetizers were prosciutto wrapped asparagus, sautéed shrimp and smokey sausages wrapped in bacon.
My recommended recipe for you this month is Rice a Roni Chicken Salad, which I published in July 2023. It is a wonderful summer salad. On that note, I hope you continue to have a fun summer!
