Before Dave and I departed on our cruise to British Columbia, I had been reading about a classic Canadian dish called Nanaimo Bars.  I was hoping to try them during our trip, and we did.  These bars are a dessert in three layers.  The lower is a combination of crushed graham cracker crumbs, pecans, coconut, sugar and cocoa powder.  The middle section is vanilla buttercream, and the top is chocolate ganache.  They are heavenly and this is my recipe for this month called Classic Canadian Nanaimo Bars.

Nanaimo is a city on the east side of Vancouver Island and west of Vancouver.  The city was founded on coal mining in the 1850s and has evolved from a Hudson’s Bay outpost to a dynamic regional city today.  In my reading, an early reference to Nanaimo Bars was that they were included in coal miners lunch buckets when they were going to work.

Our two-week adventure with many other boats in our Yacht Club to BC was a great trip.  Le Conge’ performed beautifully.  We were near Vancouver Island in the Gulf Islands and then crossed to the eastern side of the Strait of Georgia.  Our furthest destination north was the Princess Louisa Inlet.  This is the largest Fjord in North America, and you can only reach it by sea plane or boat.
