This is an easy recipe for breakfast biscuit buns as you use pre-made biscuits. Certainly, if you like to make buttermilk biscuits from scratch… that works as well. Each cup just needs the equivalent of one biscuit of dough. And Pillsbury is one company known for their refrigerated biscuits in a tube. They were started in 1872 by Charles Alfred Pillsbury. In 1949, the Pillsbury company launched a nationwide baking competition that was to become the annual “Pillsbury Bake Off”. Over the years, the bake offs have added many new products they sell today. But overall, they are famous for their pre-made biscuits. And these egg, sausage and cheesy buns are a great way to start your day!
Pre heat oven to 350 degrees F. In a skillet, cook sausage on medium heat until crumbled and golden brown. Remove from skillet and drain on paper towels. Add green onion to the skillet and cook in some of the drippings for a couple minutes until tender. Mix with sausage and set aside. Spray 8 jumbo muffin cups or 8 (6 ounce) custard cups with cooking spray. Separate dough into 8 biscuits. Place one biscuit in each muffin cup. Press the dough three fourths up the side of the cups. Divide sausage and onion mixture between all 8 cups. Crack an egg over each cup. Salt and pepper.
Top each cup with cheese.
Bake 30 to 35 minutes until eggs are firm. Garnish with chili flakes and green onion ends that are diced. Run knife around cups to loosen. And you can serve with hollandaise sauce for a richer taste. Serve immediately with your favorite fruit salad. Serves eight!
