If you are a horse lover, you are going to go crazy over this story. A hot brown is an open-faced sandwich that is a craving for me on a regular basis. Leave it to the Brown Hotel in Louisville, Kentucky. That is where this dish became famous. So much so that it is the food of choice the first Saturday in May each year at the Kentucky Derby. But not to forget that the Mint Julep goes hand in hand. The Kentucky Hot Browns is literally layers of goodness. Let the race begin!
This is an easy layer process. In small casserole dishes, place bread or stuffing waffle. To make cheese sauce, melt butter in pan and add the flour. Wisk for a few minutes so that the flour taste is removed. Add the milk. Continue whisking until all the milk has thickened into a white sauce. Turn off heat and add the cheese, salt, pepper and nutmeg. The next layers are the turkey, ham and tomatoes. Pour the cheese (or mornay) sauce over the sandwiches. Broil until bubbly and brown. This is a warm open-faced sandwich that you can enjoy with a mint julep! Serves 4.
