It’s that time of year when we are preparing food for the holidays, decorating the house and buying gifts for loved ones. I have two new recipes for you this month. The first is a holiday favorite of mine which is Swiss Fondue. The second will go well with any roasted turkey, chicken, pork or beef. It is Roasted Zucchini.
I tend to serve Swiss fondue for Thanksgiving, Christmas or New Years Eve. But after finding out that Swiss cheese is a superfood, I think Dave and I will be having this year around. It turns out that this type of cheese is good for healthy brain maintenance, it’s anti-inflammatory, full of probiotics, protects against pathogens, lowers the body’s stress responses, excellent for bone formation, has high levels of phosphorus and has more Vitamin B-12 than any other type of cheese. This makes me feel good because I used to think of Swiss fondue as more of an indulgence.
I think zucchini is delicious because it’s light and flavorful. I am wondering about its origin. My first thought is that it sounds like an Italian word. But its origins are from Mexico and other parts of South America. I was surprised to learn that Christopher Columbus brought zucchini seeds to Europe, and they eventually became an abundant crop in northern Italy. Another interesting note is that, like a tomato, it is considered to be a fruit. The name is Italian and means squash from the gourd family because it is a slim green vegetable that is harvested when it is small and tender.
