I first made these grilled shrimp skewers when we were having a potluck barbecue at our marina. The marinade and food prep is very easy. Also, the combination of Italian seasoning with garlic and lemon makes this a refreshing treat. Enjoy!
In a glass bowl, blend the olive oil, lemon juice, salt, pepper, garlic and Italian seasoning.
There are 2 ways you can marinade the shrimp. The first is to pour the marinade into the baggie with the shrimp. Seal and coat the shrimp well.
The second is to skewer the shrimp and then brush the marinade on both sides. Either way, refrigerate for at least 15 minutes but no more than 2 hours.*
*You don’t want to marinade the shrimp in the acid for too long or the lemon juice will start to cook the shrimp.
Grill for 2 to 3 minutes on each side until the shrimp are pink and opaque. Sprinkle with parsley and serve with lemon wedges. Serves 4.
