Last summer, my dad and I traveled to Denmark to visit our Danish family. My July 2018 newsletter theme was cooking in a Danish kitchen. It was a thrill to learn and make 4 recipes (that are in the blog) with Aunt Karen in her home outside of Copenhagen. This month I am featuring another one of her recipes, Karen’s Summer Salad. She gave me this recipe that she made at their summer home in Havnso. It’s in the northwestern part of Sealand, Denmark’s largest island and home of the country’s capital Copenhagen. The main ingredient for the salad is potatoes, and you can add any other fresh vegetables you want. The key to this recipe is in the dressing, which has a clean refreshing taste due to the olive oil, lemon juice and honey.
My second recipe was inspired by our neighbors when we lived in Moorestown, New Jersey. It is called Margie’s Maple Salmon. Dave and I were very close to Margie and Carlo Perrone. Though Margie is no longer with us, we enjoy visiting with Carlo, his daughter Nanda and his son Stephen. As I mention in my back story for this recipe, this is one of my favorite ways to bake salmon as it’s sweet and moist.
I am happy to report that after two years of publishing on my blog, you are going to see some significant changes to the website some time in September. The goal is to enhance the site with a new design and make it more user friendly for finding and exploring recipes!
