This month’s recipe is Carrot Cake Cupcakes. Carrot cake is my family’s favorite. It was the go-to cake for most birthdays and my sister had it as well for her wedding reception. Since my father and his wife Shirley are visiting us in a couple days and it’s Dad’s 90th birthday this month, I thought these cupcakes would be the perfect birthday treat.
So, what is the backstory of carrot cake? It seems it was invented in England where products, like carrots, were substituted for naturally sweetened cakes. This was during World War II when sugar and other food items were hard to get. In 1943, the Ministry of Food published a short recipe for the cake. The cake’s popularity rose in the 1980’s because of the perception that this is a healthier cake due to the carrots.
I recently was reading a recipe that included an ingredient called Kucharek universal vegetable seasoning. I had never heard of it, so I ordered a bag. This is used to season meat, fish, vegetables, soup and salad. It is imported from Poland. The ingredients are salt and dried vegetables (carrots, parsnips, onions, celery, parsley, leeks, tomato and sweet paprika). Recently, I put a pinch on my salad, and it added an amazing aroma and vegetable taste.
