The story behind this recipe brings back pleasant memories. Virginia Babin was a good friend of my Aunt Mollie. Unfortunately, they are both gone now. However, I fondly remember visiting the Babin’s many times for Christmas Day brunch in Arlington, Virginia. Virginia’s menu was this sausage-apple ring with scrambled eggs on the inside of the hole, Mollie’s coconut fruit salad along with various breads and cookies. In the 1800’s in the US, the names granula and granola were registered as trademarks for foods consisting of whole grain ingredients that are crumbled and baked until crisp. My cousin Beth is known for her homemade granola that never disappoints. Beth’s Raisin Coconut Granola is easy and the perfect blend of crunch from the oats and almonds along with the sweetness of coconut, dried fruit and honey. My cousins Jeff and Beth Douglas live in North Carolina and are very active with their community. When I asked about a recent bake sale they participated in, Beth mentioned her miracle carrot muffins. She said they sold very quickly and that prompt me to want to make this recipe. It is an easy and a unique way to make the muffins, because the carrots and raisins are cooked and softened on the stove. I also like that there is no oil or eggs included. This recipe for German pancakes is delicious, easy and looks fancy. Plus, instead of making so many individual pancakes, this is a one pan pancake. The recipe is a sweet version of a savory popover or a large Yorkshire pudding. There is some controversy over the naming of this recipe. Actual German pancakes, called Eierkuchen or Pfannkuchen, are more like individual crepes. But the lightness of this recipe is very similar in taste. You may have also heard this recipe called Dutch pancakes when the word for German (Deutsch) was turned into Dutch along the way. I like to serve this with sausage and fresh fruit. My husband, Dave, is a calm person. And that is why he has been the pancake maker in our family for decades. His pancakes come out perfect when he is at the stove. We like these lemon ricotta pancakes because they are much lighter than the traditional version. That is because the ricotta replaces some of the flour used in regular pancakes. This is an easy recipe for breakfast biscuit buns as you use pre-made biscuits. Certainly, if you like to make buttermilk biscuits from scratch… that works as well. Each cup just needs the equivalent of one biscuit of dough. And Pillsbury is one company known for their refrigerated biscuits in a tube. They were started in 1872 by Charles Alfred Pillsbury. In 1949, the Pillsbury company launched a nationwide baking competition that was to become the annual “Pillsbury Bake Off”. Over the years, the bake offs have added many new products they sell today. This is a healthy, delicious alternative when you need to eat on the run. I remember my mom making something similar to these cranberry coconut breakfast cookies when I was in high school. Not only were they great for breakfast before class but also when we were skiing on holidays. I like to buy the seeds, coconut, dried cranberries and oats in bulk. That way you can get exactly what you need. These cookies are large and have a nice combination of seeds as well. read more

My father and his two sisters were raised in Gallup, New Mexico in the 1930s and early 40s. My grandfather was principal of the high school. So, it is no surprise that I was also raised with Mexican food. Either on our boat or at home, Dave and I like having huevos rancheros. Traditionally it is served for breakfast. I like to make this good Pumpkin Bread not only for the holidays but 6 months later in spring or summer when we don’t tend to eat much pumpkin. I found this recipe in Cook’s Illustrated October 2012 magazine edition. The addition of cream cheese or ricotta cheese makes this so moist and delicious. This recipe makes two loaves, freezes well and is a great gift. read more
