Who doesn’t enjoy a nice warm bowl of oatmeal on a chilly morning? I certainly do, and this is the easiest recipe. Walnut Raisin Baked Oatmeal is delicious with the sweetness of the raisins and the crunch from the walnuts. I think the applesauce rounds off this dish well as it’s nice and smooth. What a great way to start the day!

 2 cups uncooked quick cooking oats (I used gluten free)
 ½ cup brown sugar
 1/3 cup raisins (I used craisins because I had them on hand)
 3 tablespoons chopped walnuts
 1 teaspoon baking powder
 ½ teaspoon grated nutmeg
 ½ teaspoon cinnamon
 1 ½ cups whole milk
 1 teaspoon vanilla
 ½ cup applesauce
 2 tablespoons butter, melted
 1 large egg

Preheat oven to 375 degrees F. Grease an 8-inch square baking pan and set aside. Grab 2 bowls. In the first bowl, combine the first 7 dry ingredients.

In the second bowl, combine the last 5 wet ingredients. Mix the wet ingredients with the dry and pour into the baking pan.

Bake 20-25 minutes. This serves 6-8 and it’s that easy!
