Easy French Onion Soup

I love French onion soup. However, typically in restaurants you end up with a large crouton covered with cheese that is hard to cut up. This Easy French Onion Soup takes care of that dilemma. I cover the soup with salad size garlic cheese croutons before adding the cheese to broil. What I also like about this is that you make it in a slow cooker, which takes away all the labor of stirring for long periods of time over a hot stove. It is that easy and delicious!

 ½ cup butter
 1 teaspoon salt
 1 large or 2 small red onions
 2 large sweet onions
 Two 10 ounce cans Campbell’s Beef Consommé
 3 ½ cups beef broth (I used stock)
 1 tablespoon balsamic vinegar
 2 springs fresh parsley, minced
 2 springs fresh thyme, minced
 Salt and pepper to taste
 3 cups grated Gruyere or Swiss Cheese (I used Jarlsberg)

In a slow cooker set on low, melt the butter.

Cut ends off onions. Slice in half and peel off outer skin.

Place each half in a food processor.

Add the onions to the slow cooker and mix well with the melted butter. Add the salt and mix well with your hands.

Add the beef stock, consommé, balsamic vinegar, parsley, thyme, salt and pepper. Stir well, cover and keep slow cooking on low.

Cover and cook for 8-10 hours on low. Stir once or twice, if you can. This can be done overnight.

Prepare the Garlic Cheese Croutons and set aside.

When ready to eat, ladle the soup into 4 soup bowls that are oven safe.

Generously layer each bowl with garlic cheese croutons. Then sprinkle the grated Swiss cheese evenly on top of all 4 bowls. Broil until the soup is brown and bubbly. Serves 4. Bon Appetit!
