There is a wonderful town called Gig Harbor on the South Puget Sound. Over the years, we have visited Air Force friends that have lived there. Recently, we returned on our boat for the second time to enjoy the harbor with our yacht club. That day, a few of us had a wonderful Thai lunch that included some amazing curry dishes. My header photo is my wonderful plate. This month I would like to share a long-time curry recipe of mine, and it is called Curried Carrot Croquettes. It is my favorite appetizer to make. It isn’t difficult but is best to do in phases for a couple days. If you click on the recipe, it describes the layers of crunch and flavor.
