Dave and I have just returned from our second long cruise this season. We left our slip at the Port Ludlow marina early this month to meet up with other yacht club members on 13 boats at Roche Harbor marina on San Juan Island. This was my first time to be cruise director. It was a fun 4 days. Then we headed off to Victoria in British Columbia, Canada with two other boats. That was a fun time. Victoria harbor was interesting to arrive in on your own boat. There is a lot of marine activity.
While at the Royal Victoria Yacht Club, we enjoyed brunch one morning. One of the menu options caught both of our eyes. It was called Eggs Blackstone. So, we both ordered it with some fruit. This is the Canadian version of eggs benedict but with some differences. There was a grilled slice of tomato on top of the toasted English muffin. Then instead of Canadian bacon, there was fried bacon. The rest is the traditional poached egg with hollandaise sauce. Here is my recipe for Easy Eggs Benedict. If you want to try Eggs Blackstone, all you have to do is add grilled tomato slices and bacon.
