Classic Grilled Cheese

The perfect grilled cheese sandwich is not fancy. With very few ingredients, this is one of the easiest and most delicious bites we can enjoy. The standard grilled cheese is usually white bread with American or processed cheese in the middle. This classic grilled cheese recipe bumps it up a notch with little extra effort. I think the reason sourdough has become so famous for this sandwich is because of the flavor and texture with the melted cheese. Be sure to serve it with a hot cup of tomato soup!

 4 slices sourdough bread, ½ inch thick*
 8-10 tablespoons butter, room temperature
 1 cup grated parmesan cheese (I used manchego)
 4 slices swiss cheese**
 4 slices cheddar cheese**

Lay 4 bread slices out on a board.

Generously butter one side of each piece of bread. Be sure to butter to the crust.

Sprinkle the Parmesan on the buttered side of the bread.

In a pan (I used cast iron), turn the heat on medium high. Place 3-4 tablespoons of butter in the pan.

When it has melted, lay 2 of the pieces of bread in the pan with the butter/cheese side down. Overlay 2 slices of cheddar and 2 slices of Swiss cheese.

Lay the remaining two pieces of bread over the cheese with the butter/cheese side up. Let the sandwich grill undisturbed on the first side for 5-7 minutes.

Using a spatula, turn the sandwiches over so the other buttered side can grill for 3 minutes. Place the grilled cheese on a cutting board and let it sit for 3-5 minutes as the cheese will continue to melt. Serves 2 with one sandwich per person.

*Sourdough bread is the most popular, but you can use almost any type of bread. Just be sure it has some thickness as a thin slice will fall apart.

**Cheddar and Swiss cheese are favored, but you can substitute with the cheese you have on hand.
