Cucumber salad is by far one of my favorite summer side dishes. Who doesn’t enjoy the crunch of a marinated cucumber. This recipe is from my Danish Aunt Karen’s kitchen and the Danes call this Agurke Salat. She also likes to garnish a spoonful of this salad on one of their famous open-faced sandwiches called “Smorrebrod”. I tried this at her home and it was fantastic. And the beauty of this easy to make salad is that it last’s well in the refrigerator for up to a week!

1 large thin English cucumber (thin variety)
 4 tablespoons white vinegar
 4 tablespoons water
 4 tablespoons sugar
 Salt and pepper
 Chopped parsley for garnish

2

Slice the cucumber very thin. Stir together the vinegar, water and sugar in a pan. Under high heat, boil and stir until the sugar dissolves. Take off the heat to cool for a few minutes. Add the cucumbers and season with salt and pepper to taste.

3

Chill covered in the refrigerator for a couple hours. Garnish with fresh parsley and get ready for some crunchy goodness! Serves 4.
