German Split Pea Soup

German split pea soup or Erbsensuppe is hearty, healthy, and easy to make. This is a favorite dish served in Germany and Austria during the fall and winter months. Historically, this pea soup was served all the time for the “men of the sea” because the dried peas could be stored and cooked easily on-board ships. Guten Appetit!

 Two 10-ounce packages of frozen green peas *
 3 cups of cooked & chopped sausage, ham or bacon
 2 carrots, chopped
 2 leeks, chopped and cleaned
 2 cups roasted and chopped new potatoes
 1 tablespoon chopped parsley
 1 tablespoon butter
 3 cups chicken stock
 3 garlic cloves, chopped
 Salt and pepper to taste

In a large pan, sauté the garlic, leeks and carrots in butter until tender. Salt and pepper to taste.

Add the frozen peas, parsley and stock. Stir and cook until peas are soft.

Add the roasted potatoes. Puree the ingredients in the blender in batches and return to the large pan. Add the sausage, ham or bacon. This makes 6-8 servings.
*An even easier way is to use two cans of Amy’s Organic Split Pea Soup in lieu of the frozen peas.
