My new recipe is Hawaiian Macaroni Salad. This is a dish I have been wanting to publish for some time. You may be wondering why I would want to give you a summer dish during the Christmas season? The answer is twofold. The first is easy because if you are serving ham or beef for the holidays, this is a perfect side dish. The second is that I keep an inventory of recipes I would like to publish, and this was the month I wanted to get this on to my blog.
As I am getting ready to cook aboard Le Conge’ this spring, I wanted to give you an update on her renovations. She is out of the water, on hard stands and under a shelter for a few months now in Port Townsend. That is my footer photo. As part of our retirement plans, we hope to be heading with her to the San Juan islands and then on to Vancouver Island, Canada next year.
Because of my upbringing in Germany, I normally make Wiener Schnitzel, Spätzle and Black Forest Chocolate Cherry Cupcakes for our Christmas dinner. But this year I have ordered a spiralized brown sugar ham and I think this macaroni salad with some garlic sautéed red peppers might do the trick.
